Session 1: Bread making:

Recipe for bread
Ingredients:
1.5 tbsp Salt
1.5 tbsp Yeast
3 cups luke-warm Water
6.5 cups Flour (White or whole wheat)
3-5 Tbsp oil (canola or vegetable)
4-5 tbsp honey or applesause
Any nuts, herbs (use olive oil for herb bread), fruit

Pour salt and yeast in to a large mixing bowl

Add water, stir to make sure everything is well mixed

Add oil, honey/applesause, and any nuts, herbs, or fruit you'd like to have in your bread, stir again

Add Flour

Using a wooden spoon (or your hands if you feel like getting extra messy), mix the dough together, making sure that all areas are mixed. If your dough is too dry, slowly add small amounts of water until consistancy is right. Dough should be just slightly wet, not too sticky. You may need to do the last bit of mixing with your hands.

Once dough is all mixed, cover bowl with a moist kitchen towel and let sit to rise for 2 hours at room temperature.

Once dough has been set to rise, you can either: put it into a container with a lid (though make sure the lid is not fully sealed as the dough will release a gas which may make the sealed container explode) and store it in the fridge for up to a week (it may start to smell like beer after a while, this is the yeast reacting, you should use it very soon). If you are ready to bake, cut off a catelope sized chunk of dough and roll it in your hands to reform it, then place it in a loaf pan (you can get these at any kitchen store, Canadian Tire, etc.). If you don't want your bread to look like conventional bread, then you may cook it on a lightly floured hot pizza stone or baking sheet.

Preheat your oven to 350 degrees Celcius. Before placing bread in oven, use a seraded knife to make cuts lengthwise down the bread to stop the bread from cracking. Once oven is heated, place bread inside on the middle rack. If you have a pie tin or broiler tray, you can put some hot water in it and put it in the oven. The water will help keep the bread moist as it bakes.

Once bread is cooked, take it out and let it sit for at least half an hour to cool. This allows the bread to finish baking on the inside. If you have a spray bottle that can shoot a very fine mist, spray the loaf with a cool mist as soon as it comes out of the oven (this will make it extra soft!) You will come out with a fresh warm loaf of bread. Cut into slices and enjoy!
